Chakalaka and Black Bean Shakshuka

Chakalaka and Black Bean Shakshuka

3T canola oil

3 cloves, garlic, finely chopped
1T coriander seeds, crushed
1T cumin seeds cumin seeds, crushed
1t smoked chilli flakes
1t ground turmeric
5 curry leaves
400g Rhodes Quality tomato and onion mix
400g Rhodes Quality Red speckled beans
400g Rhodes Quality Chakalaka hot and spicy
Salt and freshly ground black pepper to taste
6 free range eggs

Heat the oil over a medium heat before adding the garlic and spices to toast until fragrant. Once toasted add the curry leaves, Rhodes Quality tomato and onion mix, Rhodes Quality speckled beans and the Rhodes Quality chakalaka. Reduce the heat to low and season with salt and freshly ground black pepper and allow the dish to slowly simmer to marry all the flavours.
After 15 minutes crack the eggs into the dish before covering with a lid and cooking for another 7 minutes or until the egg is cooked to your preferred doneness. Season with extra seasoning if needed and serve with steam bread.
