BBQ Quorn Tacos

For the BBQ sauce: combine
2T canola oil
500g Quorn pieces
3/4 cup BBQ sauce
4T Tabasco chipotle
Salt and freshly ground black pepper

6 hard shell tacos
For the slaw: combine
1/4 small cabbage, thinly shredded

2 spring onions thinly sliced
1 carrot, grated
4T coriander, roughly chopped
2 limes, juiced
2T extra virgin olive oil

Medium fat feta cheese to sprinkle over
Spring onion, thinly sliced to serve

Heat the oil over a medium heat. Begin cooking the Quorn and add the BBQ sauce only when the pieces are almost cooked. Finish with the tabasco and allow the BBQ to glaze the Quorn before removing from the pan. Season with a little salt and freshly ground black pepper.
Add some of the slaw to the taco before adding the BBQ Quorn. Sprinkle some of the feta over and finish with the spring onion before serving.
