12 Woolies milk chocolate coated marshmallow eggs
Oil for deep frying
Icing sugar for dusting

For the batter
3/4 cup polenta
3/4 cup self-raising flour
1T sugar
1 free range egg
2T raw honey
3/4 cup buttermilk
2t canola oil

Using popsicle sticks: skewer the marshmallow eggs through the length before placing them in the freezer for an hour to freeze until firm.
Combine the polenta in a blender or mixing bowl along with the flour, sugar, egg, honey, buttermilk, and honey.
Blend or mix together until smooth, forming a thick batter. Add the batter to a beaker making it easy for dipping the frozen eggs.
Heat the oil for deep-frying. Dip the frozen marshmallow eggs into the batter coating well.
Carefully hold the coated marshmallow in the oil and fry until the batter becomes golden and cooked through, this should only take 2 minutes.
dust with icing sugar before serving.
