Curry Week part 2 with Chef Neill Anthony

Curry Week continues here on Afternoon Express, and today we’re joined by celebrated Private Chef Neill Anthony! Did you know that curry powder has potent anti-inflammatory properties and contains powerful antioxidants?
Chef Jay kicks things off with a demonstration of how to make Thai Green Curry Paste, an easy and flavourful way to elevate your curries at home. Top tip: the paste can be made in advance and be kept in the freezer until needed.
We put the paste to use in a mouthwatering vegetarian Green Thai Curry. Next up, we bring things closer to home with Amagwinya, or Vetkoek, with Curried Mince and Rice. Garnish with coriander to complement the aromatic flavours.
Last but not least, the chefs rustle up a Tomato and Tamarind Fish Curry. The combination of the rich flavours of tomato and the tanginess of tamarind makes this dish the perfect winter warmer for your family.
Outside of the kitchen, Jay and Neill’s general knowledge are put to the test in a curry-themed trivia game. Play along at home and see how well you know your curries!
