African Cuisine Week part 2

Yesterday was Africa Day, and we’re sticking to the theme of African Cuisine as we come to the end of Africa Month. Today we’re exploring dishes from four different African countries.
The lovely Clara Kapelembe-Bwali and Lulu Haangala-Wood are back in the loft. We kick things off with a plant-based Zambian delicacy, Chikanda Burger. The recipe was created by Lulu, and showcases Chikanda, a meat-like plant product made from the tubers of a wild orchid.
Also on today’s menu, we have Boerie Rolls with Chakalaka Mayo and Crispy Rice, Stuffed Chicken Breast with Roasted Red Peppers Sauce, and Cheesy Pap and Sweetcorn Squares with Avocado. For dessert, we make Custard Puff-Puffs, a sweet treat that is found in different forms all over Africa.
But that’s not all, we also have the talented singer Zoe Zana on the show with two thrilling performances. Stay tuned because we even managed to get her into the kitchen towards the end of the show.
